

We had the great pleasure of meeting the Georgian Guram Baghdoshvili, at the Georgian stand at Madrid Fusion 2025. He is the Chef at Karater (Lisbon) and Chveni (Georgia) .
He told us firsthand a little of its history and the history of Georgian cuisine.
Charismatic, funny, gentle and always with a smile we were able to taste the wines of the land whose variety of grapes exceeds 500 and with a tradition of more than 8000 years.

ABOUT GURAM
Georgian native the internationally renowned chef, Chosen by the French guide Gault Millau in 2019 Best Chef of the Year, awarded with 3 hats.
Awarded 5 years in a row by the same guide with the title of "Table Original".
His xperience counts more than 30 years’ majority of which were spent in Europe, specifically in Portugal where He has worked as a Head Chef at The Nikki Beach Portugal and later on as an Executive Chef at the Group NoSoloAgua.
Upon returning to Georgia He opened his group of restaurants “Chveni” in three different regions of the country, He joined the culinary TV program “My Kitchen Rules” and “War on the Kitchen” as a host and a judge and became an Executive Brand Chef at Vinotel.
He was invited in Dubai as an Executive Brand Chef at “MODI” – first Georgian restaurant located at Sofitel Downtown.
Recently, He is the co-founder in different companies, including: Chveni Restaurant, Food & Market, New Sairme Restaurant , Georgian Gastro Tourism Business Association, Sairme Tourism and Gastronomic Academy, Daira Restaurant, Thai-Thai Restaurant, Oval Restaurant to name a few.
In Georgia and among his professional colleagues, he is called " the Guardian of Georgian Cuisine" Last but not least, He is the only chef in Georgia (probably in the world too) who has worked for the Three presidents of Georgia, he is polyglot , speaking several languages as Georgian, English, Portuguese, Spanish, Italian, French, Russian.
